Healthy Lunch Ideas For Work

Planning and packing a healthy lunch is the key to making good food choices during your work day.  Instead of grabbing some greasy fast food, try one of these six healthy lunch ideas for work.  They’re in two categories – pita sandwiches and salads – that are easy to make and take with you.


Pita Sandwiches


Pita bread, or pocket bread, is great for lunches because they’re portable, and you can fill them with anything you like.  Here are three ideas.

Tuna Pita – Mix albacore tuna and finely shredded carrots with light mayo and a little mustard, and stuff into a pita pocket with lettuce, tomatoes, sliced onions and pickles.

Fresh Veggie Pita – Fill a pita with hummus, alfalfa sprouts, sliced tomatoes, cucumbers and red bell pepper.


Chicken Caesar Pita – If you’ve got leftover chicken caesar salad, use it to fill a pita for a fast and easy lunch.  Sprinkle with grated parmesan cheese.



Salads


Salads with low-fat dressings are easy and healthy.   To prevent a salad from wilting before lunch, pack it with the dressing in a separate container, and pour it on right before you eat.  Try one of these delicious salads.


Greek Salad – Toss romaine lettuce, diced tomatoes, diced cucumbers and Kalamata olives with a light vinaigrette of your choice.



Caprese Salad – For this delicious Italian classic, drizzle extra virgin olive oil on layers of diced tomatoes, sliced fresh Mozzarella cheese and shredded fresh basil.  Sprinkle with salt and fresh ground pepper.


Asian Shrimp Salad – Mix leftover noodles (whole wheat spaghetti or linguine works well) with carrots, edamame, sugar peas, baby corn, thinly sliced bell peppers and grilled or sauteed shrimp.  Toss with your favorite Asian vinaigrette.  You might want to let this one marinate in the fridge overnight.
